Poached Shrimp for Shrimp Cocktail

This is our favorite way to cook shrimp. If you have not poached shrimp, you will be amazed at how tender and juicy they will turn out, while keeping their size and shape with minimal damage.

Ingredients:

24        -           large               shrimp (21-25 count per pound)

1/2       -           tsp                 salt (to taste)

A) In a large (5-6 qt.) saucepan, fill to 3/4 with water.
B) Bring to a rapid boil. Remove from heat.
C) Add shrimp and cover with lid. Allow residual heat to cook shrimp for 4-7 minutes. (If shrimp is thawed, cook for 4-5 minutes. If frozen, cook for 5-7 minutes until shrimp are opaque and pink.)
D) While the shrimp are cooking, prepare an ice bath: In a large bowl, add 2-3 cups of icecubes and fill halfway with cold water.
E) When shrimp are cooked, drain off the hot water and transfer the shrimp into the ice bath. Alllow them to chill for a few minutes to fully cool before draining off the water and ice.


Yield: 1 pound of delictable shrimp! Serve with Shrimp Cocktail Sauce.
